Colombia Mauricio Shattah La Negrita Maragogype Filter - Rare Single Origin.

Dr Mauricio Shattah is a former radiation oncologist turned coffee producer, and the owner of Finca La Negrita which sits on the volcanic slopes of Nevado del Tolima. Mauricio treats the farm as a living laboratory, cultivating rare varieties such as Gesha, Maragogype, Mokka, Laurina, Wush Wush and Typica Mejorado, and running tightly controlled experiments in anaerobic and nitrogen flushed fermentations to push flavour without sacrificing cup clarity.

Mauricio runs roughly 100 processing experiments per year at La Negrita, using techniques inspired by beer, wine and sake production (Nuruk, Koji, selected yeasts) to create highly distinctive, repeatable flavour profiles.

Mauricio explicitly favoursalcoholic/ethanolic fermentation over lactic, acetic, propionic and other acid-driven pathways. His aim is to stay in the early alcoholic phase, where yeast activity builds aromatic complexity. This encourages yeast dominated metabolism (especially Saccharomyces and related strains) so that sugars in the cherry are converted primarily into ethanol and esters, rather than large amounts of organic acids; this keeps acidity vibrant but integrated and not dominant.

This lot showcases Maragogype variety and a fermentation driven by Nuruk, a traditional Korean grain starter. Whole cherries are sealed in anaerobic tanks with Nuruk and flushed with nitrogen, creating a low oxygen environment where the starter guides a slow, controlled fermentation that builds sweetness and aromatic complexity.

Daniel Q. ★★★★★

Ground coffee this rare usually disappoints, but the fact that a former radiation oncologist grew these massive Maragogype beans shows up in every sip. I brewed it as a pour-over and got a clean, complex cup that lasted through multiple tastings. Definitely worth the price for a coffee this unique.

Sophia Q. ★★★★★

The floral notes really come through on this one, and the beans are so evenly sized it made for a super consistent grind. I've been brewing it as a pour-over and the cup is incredibly clean with a long, sweet finish. Definitely worth seeking out if you enjoy exploring unique coffee origins.

David ★★★★☆

The bag’s aroma is incredibly delicate, almost like jasmine. I’ve found it needs a slightly coarser grind than my usual filter setup to really shine. A lovely, nuanced cup for patient mornings.
